Easily the FXX. There is no doubt that the Veyron is a hell of a technical achievement but around a race track, including a £ 60,000 Nissan GTR would look silly. If you simply want maximum speed and acceleration of high-end then choose the Veyron. If you want to thrash a car around a race track and have fun choosing the FXX. (Oh, yeah and another thing, Ferrari will not let you drive the FXX on the road is a bit of a nuisance)
